Hello!
Quite literally, where do I begin at. To say that this my winter vacation thus far has been relaxing and low key would be an understatement, although it has provided a sense of relief since my rigorous school semester ended. With the holidays at their peak– meaning lots of family and various holiday related activities– I have definitely kept busy as well as taken this time to rest and take a breather (but I’ll get into that later!).
As much as many of you don’t want to think about the holidays for awhile, reminisce with me one, two weeks back….



Presentsssss opened!

Classic family brunch.
Egg veggie scramble for them and tofu scramble for me, as well as roasted herbed potatoes, buttered toast, fruit salad and enough juice to go around.

Not a creature was present, not even a mouse!
Christmas Eve 2011. Mindblowing.
……..
Then Christmas dinner happened, where many family members and friends gathered around the table to celebrate and end a very special day.
Huge salad with roasted beets, apple, walnuts and balsamic vinaigrette, Pumpkin cornbread bake, roasted root veggies, and roast (for the omnivores).
A major hit among the table!

A plentiful holiday it was, nothing more and nothing less could have been asked for. Lots of family, an abundance of delicious homemade food, spot- on weather and plenty of laughs– just the way every year should be ended. I hope everyone’s holidays were as rich and full as mine.

Around this time, I think most of all fellow bloggers can agree that there’s no problem getting in that beta- carotene….. Am I right, or am I right?
Breakfast today.
Pumpkin- Chai Smoothie in a bowl
- 1 cup almond milk
- 1 cup pureed pumpkin
- 1 scoop vanilla protein powder
- 1 heaping tsp chai spice
- Vanilla and stevia
Topped with [homemade] pumpkin spice granola, cranberry sauce and chai spiced almond butter.
Pumpkin tofu, anybody?
Or how about some pumpkin- coconut ice cream?
Or how about getting your orange on through another one of my root veggie favs, a gooey sweet potato?

So darn good.
Squash and sweet potatoes don’t suit your fancy? How about a batch of my cinnamon- coconut carrot fries…..

Are you like me, do you consume copious amounts of orange foods (and i’m not talking about food coloring, all natural) especially during the squash season?!?
Whatever the case, get you’re orange on. Your body will thank you.
