Thanks for all the kind words about my camera yesterday– it honestly made my day. I’ve got some good news thankfully, after some tweaking around here and there my dad recovered my photos. I asked him what he did and he replied, “I just inserted that and twisted that, you know”. Not that I get it or anything, but whatever he did was magic. Thanks, dad!
I had an overall wonderful easter day– blossming with those I love, nourishing food, and beautiful environments.
I started it off with church, then headed on a hike with my good friend Avery. We went to a park called Niscene Marks very close to where I live.

Then a wonderful, warm walk with my parents to end the day. It had been foggy, drizzly, and cold all day, but by mid afternoon, the clouds broke way to glowing sunshine and warmth.
Then we cranked up the grill for a less- traditional Easter dinner….. grilled veggie sesame- ginger kabobs. They were amazingly good and hit the spot after a long day of activity and gatherings.
Grilled zucchini, carrots, asparagus, mushrooms, tofu and prawns.

Unsurprisingly, my dad managed to catch yet another photo of me blinking. Yeah, thanks dad. At least you do some things good.
Marinated in a sesame- soy ginger sauce:
- 2 T olive oil
- 2 T rice wine vinegar
- 2 T bragg’s liquid aminos (or tamari, soy sauce, etc)
- 1 inch ginger, minced
- 2 t sesame oil
- 2 t maple syrup
Whisk away! Feel free to double or triple this marinade, as I did.
….Plus a big pot of coconut- ginger quinoa.
- 1 cup quinoa, rinsed well.
- 2 cups water
- 1 cup coconut milk
- 1-2 T maple syrup
- 2 T minced ginger
Start by rinsing your quinoa well in a fine colander; then place all ingredients in a pot over high heat and bring to a boil. Once boiling, simmer covered for 15-20 minutes till liquid is all absorbed.

It was a wonderful Easter day, as you can see from the many snap- shots taken. Abundant with those I love, yummy food, outdoors and so much more. I really wouldn’t haven’t had it any other way.

Off the topic of Easter….. To all my fellow runners: What’s the quickest way to heal affected shins that ache? Also, can you recommend any workouts that are low- impact on your shins and knees? My shins have been bothering me extremely recently and I’m not sure as to why.

Looks like a great easter!! Running on sand or grass is really good for shins. When I had a stress fracture in my shin I would just hit the beach. Of course there’s still pain, but WAY less than when your pounding on cement!! Also, a bike or elliptical is a great way to keep up your cardio!!

And my dad is exactly like that too… but he knows not to even try to explain it to me anymore haha. I’ll just tell him it’s broke and he’ll hand it back fixed.

Everything looked wonderful. That grilled asparagus looks delicious!
Don’t forget to ice your shins. In training, my coach would freeze dixie cups full of water and just run them up the shins for 15 mins at a time. Hope you feel better soon.

Definitely ice your shins after you run and also stretch out your legs in general. Low impact workout would be swimming or water aerobics. Hope you heal up soon!

My dad is totally my go-to IT guru! I don’t know what I’d do without him! He can fix everything (and pack a trunk like it’s nobody’s business!).
I’m prone to shin splints – but for me, it’s all related to running. I’ve found the compression socks/sleeves totally save me – sometimes I even wear them during the day, when my shin pain is really bad! The other thing that helps is taking is completely easy from shin-straining activities (like running, walking, some ellipticals and even some yoga workouts). It gives my shins time to recover!
Good to know- thanks so much for the suggestions! Where do you buy compression socks at? I’ve been looking for them, but can’t seem to find them anywhere. I’m a bad runner- never foam roll, rarely stretch, no icing, etc.
Luckily I don’t go long distances!
