Blueberry Flax Power Smoothie

Happy Monday, friends!  Whew, here goes another longgggg week of work and school.

Lots of homework, cooking, and relaxing has been on the agenda for me recently.  My lack of blogging and involvement has been due to the craziness and business of these activities.  If i’m not doing something, then that’s quite a rare occasion.

To get through all this energy- sucking activities, I recently created a delicious, nourishing and nutrient- dense smoothie.  As said with anti-inflammatory foods, there’s really so many “super foods/ power foods” out there.  Everybody has their own idea of what superfoods may be.  I could write a whole drawn out and long post about my favorite superfoods and why so, but in the meantime, I’m share this whole, yummy smoothie recipe….

Blueberry Flax Power Smoothie

A nutrient and energy dense smoothie type pudding, chock full of antioxidants, omega- 3s, linolenic acid, protein, monounsaturated fats, b 12, fiber and much more.  Perfect for a meal or afternoon “pick- me up”.

Serves One

  • 1 cup almond milk (or milk or choice)
  • 2 tablespoons whole flax seeds
  • 1 tablespoon chia seeds
  • 1 tablespoon coconut flour
  • 1/2 cup blueberries
  • 1 frozen banana
  • 1 big handful spinach
  • 1 scoop vanilla protein powder (I used sun warrior)
  • 1/4 avocado
  • Cinnamon, stevia to taste

1.Start by grinding your whole flax seeds in a high speed blender, coffee grinder, etc. * If not applicable, just use pre- ground flax meal.

2. Next, add all other ingrediants and blend till creamy and well- incorporated.

* If you don’t have a high- speed blender, such as a Vita- mix, you may have to add more water till creamy and smooth.  Otherwise, use tamper till smooth.

3. Pour and enjoy!

By far my favorite nutrient- dense smoothie yet.  Creamy, rich, sweet, and overall satisfying.

More like a pudding than a smoothie– just the way me likes:)

Looks better than Odwalla’s superfood smoothie, huh?  I surely don’t think there’s any chia seeds or coconut flour in theirs:)

This is my new favorite post- workout or pre- statistics snack or meal. :) It’s oozing with monounsaturated fats, protein, fiber, and many other wonderful vitamins and minerals.

Before I go out and make myself another one, I’ll do myself a favor and get back to tedious homework. :(

Your smoothie looks MUCH more tempting than Odwalla’s superfood. It’s such a gorgeous blue!

Wow this looks like the thickest smoothie ever! I’ve never seen coconut flour in a smoothie but I might just have to try it, considering how awesome coconut flour is. Looks delicious and super energizing!

The two create a delicious, creamy and nourishing smoothie! You can barely taste the coconut flour, but along with the flax, avocado and banana, it’s a pudding like smoothie! You’ll have to try it :)

This looks GREAT! When I pick up some more spinach, I am def making this!

As far as superfoods are concerned, I’ve been rocking the blueberries lately! Can’t seem to get enough!
