Happy New Years Eve, all!
Wow, I felt like I was just saying, “happy Christmas Eve”, just yesterday. Despite how fast time escapes from me, I’m gleeful for the start of a new year. So much to look back and reflect on, as well as be grateful and compassionate of what 2010 brought.
I started off this morning, in gratitude for a delicious breakfast in the comfort of my own warm and lovely home:
Scrambled tofu (tofu, tahini, bragg’s liquid aminos, turmeric mushrooms and broccoli slaw); sweet potato with coconut oil; orange juice.
A scrumptious and nutritious meal to start out the new year of 2011.

And as always, I remain deeply thankful for my home in which has provided me shelter and growth in 2010.
Yes– I live in this beautiful picturesque environment!
My crazy and wacky family, whom I had excellent times with through 2010.
I have a BIG family indeed– each one of them unique in their own ways. A wacky evening at my cousin Jeremy’s wedding in San Louis Obispo.

Did somebody say coconut butter?

Yes. I remain thoroughly in gratitude for this amazing and heavenly product I found in 2010. You can see a whole post I devoted not only to coconut butter, but to coconut in general here.
And of course, soup and other eats with my lovely mama, who always is curious and adventurous to try my creations.
Hot and sour tofu soup with mushrooms and cashews added (Clean Eating, December/ January issue); whole- wheat pita; clementines.
So soothing on the belly, after a long run and on a cool, brisk day.
Oh 2011, I welcome you openly and hope for year as good, if not better, than 2010.
I hope to remain the three “H’s”….
- Healthy and wholesome
- Happy and continuly grateful
- Hard- working with my college studies, achieving the best.

In 2010, I am grateful for my husband who was extremely supportive through my pregnancy and was absolutely amazing at coaching me through natural childbirth. He is also such a good, loving and playful father. I am grateful for my daughter Annabelle. She is so good natured and sweet and brings such joy to our lives. For 2011 I hope to relax more and really enjoy every moment I have with these two wonderful people. I want to live in the moment and enjoy it rather than worry about what is ahead or what has already passed.
So lovely and heart-warming, Emily! I’m sure your family is very lucky to have you as well.
