Ice Cream For Breakfast?

You better bet.  Instead of going with the pancake Sunday tradition as most other normal bloggers do, I rolled with ice cream. Healthy green ice cream. Both naturally green and good for the environment. :-)

Don’t worry- my ice cream wasn’t sugar and dairy laden, in fact it didn’t contain any of that!  Whoever said you had to eat your dinner before your ice cream was in fact totally wrong :-)

This awaited me in the freezer while I frolicked outside for a morning run and was plenty happy to stuff my face with “ice cream” when I returned.  A runner’s dream: cold, nourishing ice cream and in this case, healthy.

Instead of using my gums to make ice cream in my Vita Mix blender, I used Katie’s ice cream trick and freezed my mixture then put back in the Vita mix to turn into ice cream.  Worked great and is now my favorite way to create ice cream :)

I won’t lie: this green ice cream really is green containing hemp, avocado, spirulina, and kale. But fear not, it’s actually super yummy and good for you, too!

Super Green Ice Cream

~Makes one (Emilia) big portion

  • 3/4 cup milk of choice (I used almond milk)
  • 2 T hemp protein powder (or sub favorite)
  • 1 tsp spirulina
  • 1 tsp vanilla extract
  • 1 T hemp seeds
  • 1 T chia seeds
  • 1/4 avocado
  • 1 frozen banana
  • Cinnamon, sea salt and stevia, to taste
  • 2 big handfuls kale or spinach
  • Optional: 1 T peanut, coconut or or other nut/seed butter; berries; yogurt….

Directions: Combine all ingredients in a high- speed blender till creamy.  Pour into a large shallow container and freeze.  Once frozen pop block out and re- blend in your blender (If you don’t have a Vita Mix blender, you may need to thaw out block for 30 seconds-  1 minute) using your tamper.  Pour into a bowl with favorite toppings and enjoy!

Topped with toasted buckwheat groats, chocolate chips, coconut and more cinnamon :-) Cinnamon makes everything better.

Surprisingly, I could barely taste the kale or spirulina due the binding from the stevia and banana.  But I must warn you, I’m a pretty hardcore veggie lover. :-)

Scared of green ice cream for breakfast?  No worries at all, I’ve made plenty of other nutritious smoothies and breakfast creations!

…Like my Blueberry- Flax power smoothie, for instance, which can easily be turned into ice cream using the ice cream technique.

Whatever the case- you can enjoy any type of flavor of ice cream to your liking.  Since I’m such a veggie lover, I went with hemp and kale, but next time I’m trying cherry, chocolate and almond. :-)

I think I would like an ice cream with blueberry, coconut, and chocolate chunks:)

That might be next on my list…. somehow my muffin and oatmeal flavor combinations seem to be very similar to my smoothie flavors as well. What’s yummy in oatmeal form is just as yummy in smoothie and muffin form :-)

Ginger, almond, coconut…maybe some carrot? Wait, I think you’ve made that into a smoothie before…eh, I just finished a mug (the size of my face I might add) of ginger tea and almond milk so I kinda have ginger on the brain! Haha!

I totally forgot that you have a Vita-Mix! You’re gonna have to play the part of Billy Mays and totally sell me on that! I realllllllly want one, but I’ve never even seen it used!

That combo sounds super delicious! I think you’re right though- that combo could’ve been made in the past. Who knows, though, I’ve made somewhere around a million different smoothies :-) Hehe.

Oh, I definitely will. It’s currently my favorite foodie toy. Don’t judge. I’ll show you how to use it and you come up with creative flavors, deal? :-)

I’m so with you on this one, a giant bowl of green ice cream on a morning is just perfect! Mmm fave ice cream combos? I guess blueberry carob, strawberry and pb, raspberry and vanilla are just a few of my favourite flavour combinations, oh and of course almond cherry :-)

Coming from a die- hard smoothie and blender lover, yes, it sure it. It’s a big investment, but a great one that’ll last you for awhile. I don’t know what I’d do without my Vitamix and when I go on vacation, I throughly miss it. I’d recommend going on their website and checking out if they have any refurbished ones you can purchase- that’s what I did. :-)
