Just Call Me Julia

Happy Thursday, all! :)

If any of you have seen Julia and Julia, which if you’re foodies, you probably have, then that’s exactly what I’ve been doing recently.  Well, along with rigorous classes, work, health issues, and much more.

Who, you may ask, may I be doing all this cooking from?

You guessed it- Ashley from Edible Perspective!

She’s done a guest post on my blog, but I also feature quite a bit of her recipes, and make my own variations on them.  I can’t tell you how much I love all of her creative, nutritious, and whole recipes.  They’re so spot on with what I love food- wise!

Ashley’s peanut butter puffmaranth with banana; green juice.

This was amazing- I love not only the popped amaranth, but blending milk with nut butter!  It gives the best taste to the bland amaranth grain, without adding any excess sugar.  I used coconut milk- it was delicious!  Good call, Ashley :)

Filled me up and energized me for hours!  Definitely a wonderful, nutrient- dense, yet fulfilling breakfast :-)

As much as I love her breakfast ideas, I’ve also made quite a bit of her savory- type dishes, as well.  Just as good as the sweet/ breakfast- type creations!

Tomato- coconut curry alongside  coconut amaranth- millet.

I served this a few nights ago- in the mood for something spicy and warming.  It most definitely did the trick and was wonderful.  Better yet, my non- vegan friendly parents loved it as well.  I make curries all the time, but this was unique and distinct.

…With added cauliflower and carrots.

And of course, it makes a perfect salad topper the next day!

Greens with leftover curry + millet +amaranth, carrot and cashews; ginger- cinnamon yogurt.

Brown Cow plain yogurt spiked with cinnamon, stevia + ginger.

And of course, as noted in my last post, I’ve had many on- the go- meals as well.

Don’t always have time to make her amazing creations.

Black bean soup, avocado- salsa wrap, and veggies.

Spiked with nutritional yeast + lime juice.

Simple. Sweet. Nourishing.

And more crazy, random salad beasts have been on the menu….

Greens with cucumber, tomato, pistachios, quinoa, nooch, chickpeas and hummus, all drizzled in garlic gold oil and balsamic; crisp blueberries.

Crazy, yummy, chock full of flavors.

As you can see, much of my eats have been revolved around Ashley’s amazing, to die for, creations.  Julia can cook french-type foods, but I’m sticking to Ashley’s amazing recipes.

Gotta go make her kale pesto- it’s pizza night tonight!

how delicious it all looks! i need to really try popping amaranth. also, buckwheat bakes are my new favorite :) totally worth the wait for it to bake and soo very filling! this is random, but your coconut amaranth millet looks so good to me- i think because its looks like it has a super thick/dense texture, my favorite!

I agree — ashley’s blog is one of my favorite places for food-inspiration. It’s nice to see you and her and others eating so healthfully — sometimes I feel all alone with my amaranth a nd kale!

Oh Lauren, you’re so not alone- there’s so many of us foodies out there! I know what you mean, though- I often feel lonesome in my love for whole foods as well.

I will be up at Santa Cruz this weekend for Strengthening the Roots convergence! I’m so bummed the weather is supposed to be rainy because a group of us were supposed to camp on campus in the redwoods area of UCSC. Anyways, everything you make looks good and makes me jealous because you don’t have to deal with campus food as a first year, like I have been. :) I can’t wait to have a kitchen next year and try all the good food and meal ideas you make. Have fun at the Strengthening Roots Program- I’m super jealous I can’t go. You’ll have to tell me all about it :)
And yes, super bummer regarding the rainy and cold weather. Hopefully you’ll still get a lot of of it, even if it’s all indoors!

I know what you mean girl! Ashley has some amazing recipes! I have yet to be disappointed with a single one!
