Key Lime Pie Oats

Good evening, all!  Hope everyone had a lovely Wednesday, aka, “hump day” or “Indian food wednesday” :-)  It’s almost Friday so that’s something definitely to look forward to!

Glad everyone enjoyed Broccoli Hut’s guest post on Tofu For Beginner’s, and if not, you should definitely check it out when you get a chance!  Very informational and she gave she valid and serious knowledge on tofu!

I enjoyed the start of my day with a bowl of luscious and creamy key lime pie inspired oatmeal….

Oats with coconut milk, sunwarrior and cocoa topped with key lime zest, banana, coconut butter, cocoa and almonds.

I’ve gotten down to the bottom of my dear coconut butter jar, so there was nothing better to whip up them some coconut butter oats.  However, I’m getting pretty tired of my usual tropical- coconut banana oatmeal, so I switched it up and tried key lime- coconut.  Results, amazing creamy dreamy flavorful concoction!  Yep, Larabar’s key lime pie flavor kinda inspired me :-)

However, I also made a change in my usual oat bran cooking regimen.  I took Ana’s advice for soaking a mixture of oat bran and rolled oats with water prior to cooking, then adding milk once boiling.  Wow Ana, you sure know what you’re talking about when it comes to preparing a yummy, dreamy bowl of oats!

Aside from yummy, creative bowls of oatmeal, I’ve also taken a couple good runs….

….Enjoyed the 65 degree, spring- like weather my area is currently having ;-)

I’m MUCH too lucky to live where I do :-)

….And been getting creative with leftovers….

Leftover rosemary lentils; apple- celery and fennel salad with garlic gold oil and balsamic.

Best combo ever- so many flavors and textures!

Wow, I’m impressed! and SO excited for the culinary creations that will ensue when you come to visit!
Also, how coconutty is coconut butter? I think I would like the texture, but not the taste. (I don’t really like coconut. I hope we can still be friends. :P )

I am, TOO- I can’t wait for us foodies to reunite. Not so sure our wallets will be, but that’s another story :)
Coconut butter is beyond amazing and heavenly in every which way. I’ve had people who don’t like coconut, which to me is sad, say they love coconut butter despite. It’s got a buttery, inseparable taste to it that melts in your mouth. I’ll have to bring some when I come your way- you’ll be changed :)

oooo key lime pie oats!! YUM girl!!!.. hmmm creative combo…. i havent been very creative lately :( …. i have stuck with my oat combo for about a month! ahaha

I do hope so, as I get bored with the same bowl- taste wise and presentation wise- every morning. Gotta change it up a bit, you know? :)

Okay…where do you live – and do you need a room-mate?! :)

You inspired me to put Butternut Squash in with my oats and yogurt – so good! Usually do pumpkin…I am going to be so ORANGE! Eek!

I’d gladly accept a foodie roommate any day- you bring the butternut squash, I’ll provide the kale :-)
Being orange isn’t such a bad thing, now is it? :-)

Mmm, the keylime Larabar is one of my faves! I love adding zest to my oats…it really kicks it up a few notches!

So jealous of your fabulous weather. We had a “heat wave” yesterday! It got up to a whopping 46 degrees!! Ugh!
