Raw or Cooked.

Happy Wednesday, all!

Is it really Wednesday already- i’m in awe of where the week has gone.  Where all the days, weeks, and months have gone, for that matter.  As with any break, I’m hoping to soak up every last minute of every day! :)

I had a couple delicious, nourishing, and awesome tasting meals yesterday I wanted to share- one using raw greens with my new cocoa- nut lime hummus, and the other cooked using eggs.  Both of which were off the wall.

Take my breakfast- eggs n’ kale.

Garlic- curry sauteed kale; oven baked cinnamon sweet potato with peanut butter; runny egg.

So. Darn. Good.

Who knew kale and eggs could go SO amazingly well together?  Only us veggie lovers, I presume.  :-)

Me and my mom’s conversation about the oddness of my breakfast:

You’re having kale n’ eggs for breakfast– really?  Sounds like  a very odd combo to me. ”  Mom.

“Yep, it’s totally tasty.  I’ll have to make it for you sometime!” Me.

And that’s how our conversation went over.  Just like all of our other conversations about my weird food combinations go over :-)

So. Tasty.

The above meal was pretty darn up there taste and look wise, but then there’s my lunch: raw and vegan, but oh so tasty.

Enter rainbow chard wraps lunch…..

What’s underneath the beautiful multicolored leaves?

  • 2 huge rainbow chard leaves
  • Cocoa- nut lime hummus (nearly 3/4 of the batch!)
  • 1/2 avocado
  • 1 banana
  • Cinnamon (lots)
  • Shredded coconut
  • Drizzle of almond butter and chia seeds atop.

Look at that almond butter + avocado + hummus love!

This lunch was a match made in heaven- everything went SO well together,

Many of you were asking how long the cocoa- nut hummus– featured in yesterdays post– would last me.  Well my friends, let’s just say there’s a matter or a few bites left  of it.  Yep- it was that good. :)

Raw or cooked, both meals were amazing.  Goes to show how you don’t have to limit yourself to one set diet- strict, raw, vegan or cooked, greasy meat eater.  While I don’t eat meat, I still include eggs and some dairy, but I do enjoy both cooked and raw meals.  Flexibility is so key, as it’s a skill you’ll have to use throughout your life.

On another note, I highly suggest you go visit Chocolate- Covered Katie’s page before 1 pm today. She’s having a bidding bake sale in honor of the traumatizing events that happened in Japan.  Yummy, wholesome vegan desserts and helping out a good cause?  Now it can’t get better than that!

Off to enjoy the next few hours before heading to work.

Eggs and kale seems fine for breakfast to me – but sweet potato at breakfast? That’s new!! Love it :)

Most unique combos EVER! The first one is awesome just because it’s your breakfast (love it!), and the second because I can’t even imagine putting those flavors/foods together. So neat!

That lunch looks AMAZING!! I actually have kale and eggs all the time :) but I love the flavors in that lunch. How the heck did you come up with that combo! I would have been terrified that it would have been gross lol that’s so awesome that you are brave enough to try things like that!!

I eat a lot of kale – like at least a bunch a day. I will put it in salads, I will juice it, and of course I will make dehydrated cheezy kale natcho chips, but I never cook it. I’ve never liked cooked spinach, so I’m frankly scared/weirded out about trying it cooked. Maybe I will have to get over myself one day and apply some heat to my kale.
As for the sweet potato? Breakfast, lunch, dinner or snack, bring it on!

I’ve had chard only once and it was heavenly braised, but I’ve never had it raw. I’ve seen chard wraps on the blogs but simply, how does it taste?

Can’t even taste the raw greens, as their smeared with nut butter and banana- seriously! Give it a shot. I thought the same thing before giving these sweet raw wraps a go, but fell in love upon trying them. There’s always an excuse to eat leafy greens and nut butter, huh? :)

Haha- I think you’ll really like the sweet chard wraps! A great way to get raw leafy greens into your diet more. :) Or it just may be another excuse to eat more nut butter, hehe :)
